The Maya Kitchen: Cooking Class with Executive Chef of Mandarin Oriental

Saturday morning, my mom was able to share with me class which I'd be able to learn some cooking and/or baking techniques. Even though I was by myself, I enjoyed a lot. I really really enjoyed a lot. I was even full. I learned a lot of tips from Executive Chef Rene Ottlik.

I envy this man! I seriously envy him! He works at Mandarin Oriental Manila, which means he serves such extraordinary dishes to famous people around the Philippines or even around the world. He has shared God's given talents of him such as cooking and preparing.It's such an ease for him to cook this recipes. They know the techniques you may or may not use. Summary I swear I love how he taught and demonstrated to us the different recipes below.

Here are just some photos I took that day. If you're hungry right now then beware... This might make you eat your laptop.

Fritata Sweet Pork with Orange Olive Tapenade, Tomato Top & White Balsamic Dressing

The Fritata serves as a delicious appetizer. When I was able to taste its delight, it becomes a full meal view to me. It has proteins and vegatables. I can always eat this on its own, even without carbohydrates. It looks so delightful even. The colors are attention getters and it will really make you drool on it before even eating it.

Crispy Chicken Croquettes with Garlic Alioli

I'm telling you this has the strongest taste of all!! The Garlic Alioli was surprisingly bombing. What do I mean by this? Once it gets into your mouth, the scent, the taste, the texture, it explodes inside your mouth! Really delicious! This is one of my favorites actually, because it look so ordinary, simple and normal on the outside. You might even think of this as something processed that is sold somewhere. BUT NO! Seriously... I can die when I will be able to perform this recipe.

Gazpacho

Ahhh! The Gazpacho or as the chef calls it, the "cold soup." This dish gave me goosebumps when I tasted it. Just like the croquettes and alioli, the taste of this Gazpacho explodes in your mouth. The garlic bread beside it, even adds to the wonder of this dish! The texture of the bread complimented with the texture of the soup! It's soup but it was presented in a glass. It's not a problem, it still captures my taste buds.

Smoked Salmon Tartar stuffed inside a Cucumber strip with Sour Creme & Black Pepper Crisp on top

I LOVE THIS! The Salmon... AMAZING... OUTSTANDING.. I can't even say more about it. It's just perfect for me. The watery cucumber really really compliments with the salmon and the sour creme which adds a wildness of its taste which just makes the Salmon taste better. I won't forget the crisp... cause it serves as the hard part of the recipe. Since, the salmon, the sour creme and the cucumber are obviously soft, the crisp of the black pepper crisp makes it perfect! IT IS REALLY PERFECTION.


Almond Sponge Cake

I'm speechless. This was made just in a snap! Maybe, its because the chef used a special instrument upon making this and yes, time will not bother the taste of it product. Its a combination of sweet and soury taste of dessert. It has sweets and fruits! You can even put anything you want as long as it compliments the Almond Jelly.

This became my lunch and guess what... I haven't finished everything yet, but I'm already full. SO DELICIOUS! I'm telling yo, even these small servings can be a big meal when you eat it all together.
MACAROONS! An additional treat by the chef. 
He didn't teach it to us but we were able to taste its goodness. It even looks so pleasing and elegant. I wanna learn it soon.
